Duncan Cooks Live – The Recipes Week 1

Last Thursday we had the gorgeous Duncan James and his mum cooking for us live on our Instagram channel and it was a boat load of fun. They made some incredible date balls and a fabulous soup from items they found in the cupboards.

Our intention was that we would post the video right here on the blog, so those of you who missed it could watch.

But we messed up! We lost the video somewhere in the depths of Instagram, confined never to see the light of day again 😞

As lots of you asked for the recipes on the live stream, we do still have those for you below.

Fear not though, because Duncan and his mum are back this Thursday (2nd April) and this time we are doing it on Facebook to make sure we don’t lose any more video’s

Date Balls Recipe

Ingredients

  • 400g  medjool dates pitted
  • 180g walnuts
  • 2 tbsp peanut butter
  • 2 tabs coconut oil
  • 2 tabs cocoa powder
  • ½ cup desiccated coconut
  • 2 tbsp sesame seeds
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tabs agave nectar

Instructions

  1. Place the walnuts in a blender / food processer and process for 30 seconds
  2. We added pitted dates, cocoa powder, coconut oil, peanut butter, vanilla extract and salt
  3. We processed that until it was sticky
  4. We like our bars shaped circular but you can roll out the mix flat and cut into squares or roll as we did into individual balls
  5. Sprinkle with sesame seeds
  6. Put in your fridge for 30 minutes to set then they are ready to eat

Soup Recipe

Ingredients

  • Celery
  • Onions
  • Garlic
  • Stock Cubes x 2
  • Added Water
  • Butterbeans
  • Tomatoes
  • Salt
  • Pepper

Instructions

  1. Chop the celery and onions- use as much as you need depending on how many people the soup is for
  2. Next we added half a garlic clove
  3. We put this all in a heated pan with some oil in
  4. Then added 2 small stock cubes and mixed in the pan
  5. Then add just under a pint of water and mix
  6. We then let this simmer so everything softened
  7. Then we poured it out of the pan into a blender to soften the ingredients even more
  8. Once soft after around 30 seconds in the blender we added it back to the pan
  9. We then added some butter beans
  10. Let it simmer for a few more minutes and you have your soup
